Chia seeds are tiny powerhouses high in protein. They promote digestion through their fiber content, aid weight management and work as an appetite suppressant. They are also a great source of energy for athletic performance, and are packed with Omega-3 fatty acids. They are versatile and can be used to replace eggs and can be used as binder, thickener, gelling agent, and even breading, perfect for puddings, cakes, smoothies, among others.
Lavender Berry Surprise Pudding
1 cup raspberries
1 cup blueberries
juice of ½ a lemon
1⁄2 cup cashews , soaked and rinsed
1 tbsp hemp hearts
1 tsp vanilla powder
pinch of lavender buds
2 cups water
¾ cup chia seeds
Add cashews, dates, berries, lemon, vanilla and lavender to a high-speed blender and blend with water until frothy and creamy. Place chia seeds in a bowl and pour the mixture over top. Stir and let sit for ten to twenty minutes to allow the chia to swell as it takes on a gelatinous state. Serve with a handful of fresh blueberries on top!
