Day 07

Consuming juiced fruits and vegetables allows the human body faster and greater absorption of the nutrients which supports liver detoxification. Different than a smoothie, a juice provides a flush of nutrients to the system when no fibre is present to slow the absorption. This is why you get hungry quicker after a juice verses a smoothie.

Blood Builders Brew

Ingredients:
1 red beetroot
1 carrot
1 tomato
½ cucumber
1 cup pineapple, chopped
One whole lemon

Procedure:
Process through a juicer or blend in a high speed blender then using a nut milk bag, strain the fibre out. Keep the roughage to add to raw crackers.

Day 06

Fermenting allows stocking food for a long time but that isn’t the best benefit. We’ve heard it’s good for gut health, this is true! But fermentation also removes toxins from our food, makes the food enzyme-rich that pre-digests the food making it more easily absorbable by the body.

Basic Sauerkraut

Ingredients:
5 pounds cabbage and or mixed vegetables
3 tablespoons pink Himalayan pink salt

Procedure:
Thinly slice the vegetables (leave a few large leaves for the top layer). In a ceramic crock pot or 1 liter mason jar, layer the vegetables adding a pinch of Himalayan pink salt to each layer. Punch/press/pound with a pestle the vegetable after each layer to start the culturing process. When ready to cover, arrange the cabbage leaves over the top and make sure it is totally covered. You just then weight the kraut down to prevent the cabbage from floating and keeps it under the brined. Do not seal the jar. Over the first 24 hours, check the kraut 3-4 times and press it down to make sure that the brine level rises to just above the cabbage. If after 24 hours there isn’t enough brine to completely cover everything, dissolve 1 tbsp of Himalayan pink salt in one cup of water and use this brine to fill the water line to just above the level of the cabbage. Ferment for 1-4 weeks (more salt, more time). You may see white/grayish mold on top, this is normal but must be removed before eating. To package the kraut, transfer in a mason jar and store in the fridge. It will keep for months.

Day 05

It is often perceived that muscle-building protein can only be sourced from meat and fish, but there are plant-based potent sources of protein like nuts, lentils, grains, and a variety of fruits and vegetables. Even the goji berry contains a complete spectrum of amino acids and is considered to have one of the highest concentrations of protein in a fruit.

Goji Berry Orange Fudge

Ingredients:
¼ cup raw almond butter
½ cup raw cacao powder
½ cup coconut nectar/ raw honey/ maple syrup
¾ cup goji berries
1 ½ tbsp virgin coconut oil
2 drops wild orange essential oil
2 tsp vanilla powder
A pinch of Himalayan pink salt

Procedure:
Place all in the food processor, process until goji berries are hard to identify. Transfer to a mason jar and eat this one by the spoonful!

Day 04

Sprouting and soaking legumes and seeds increases their enzyme content, vitamins, and minerals. Once sprouted and soaked, it is easier for the body to digest and absorb the nutrients. Further, sprouting and soaking can yield up to 24 times of its unsprouted volume – definitely more filling and will save you money!

Love Your Liver Salad

Ingredients:
salad
2 cup baby spinach
Mixed baby greens
2 cup baby arugula
1 cup red radishes, sliced thin using a mandolin
¼ cup finely diced celery
1 avocado, chopped into small pieces
½ cup sprouted lentils
¼ cup pumpkin seeds (previously sprouted and dehydrated)
½ cup sprouted wild rice
add wild edibles – depending on the season (rose petals, dandilion greens and flowers, juniper berries, clover, fiddleheads, nettles, etc.)

dressing
1 garlic clove
1 tbsp dijon mustard
¼ cup apple cider vinegar
1 tbsp fresh lemon juice
1 tbsp liquid sweetener
½ cup hemp oil
pink salt and pepper, to taste

Procedure:
Wild rice and lentils should be pre-sprouted. Prepare salad ingredients by chopping, shredding, dicing, etc. Place all in a large mixing bowl. Add sauce ingredients to a high-speed blender and blend on high until well mixed and creamy, pour over salad and mix well using tongs.

Day 03

Said to be the best kept secret in the history of food… in its raw form, chocolate is a healthy food product: it is high in antioxidants, iron, magnesium, and calcium. It is also an aphrodisiac and anti-depressant.

Aztec Cacao Elixir

Ingredients:
½ cup coconut butter
¼ cup raw cacao powder
¼ cup raw honey
2 tbsp cacao nibs
2 tbsp coconut oil
2 drops of cinnamon oil
½ tsp chipotle powder
7 cups boiling hot water

Procedure:
Add all to the Vitamix and blend for 1 minute.

Day 02

Chia seeds are tiny powerhouses high in protein. They promote digestion through their fiber content, aid weight management and work as an appetite suppressant. They are also a great source of energy for athletic performance, and are packed with Omega-3 fatty acids. They are versatile and can be used to replace eggs and can be used as binder, thickener, gelling agent, and even breading, perfect for puddings, cakes, smoothies, among others.

Lavender Berry Surprise Pudding

Ingredients:
1 cup raspberries
1 cup blueberries
2-3dates, pitted
juice of ½ a lemon
1⁄2 cup cashews , soaked and rinsed
1 tbsp hemp hearts
1 tsp vanilla powder
pinch of lavender buds
2 cups water
¾ cup chia seeds

Procedure:
Add cashews, dates, berries, lemon, vanilla and lavender to a high-speed blender and blend with water until frothy and creamy. Place chia seeds in a bowl and pour the mixture over top. Stir and let sit for ten to twenty minutes to allow the chia to swell as it takes on a gelatinous state. Serve with a handful of fresh blueberries on top!

Day 01

If there’s one spice you need in your life, turmeric is it. It is a powerful anti-inflammatory, anti-bacterial, immunity booster, pain killer, and anti-depressant. It also supports digestion and manages cholesterol, diabetes, and cancer. It rocks! But like any powerful food, a little goes a long way!

Electrolyte Sports Drink with Ginger and Turmeric

Ingredients:
3 slices fresh ginger
2 cups coconut water
Juice of 1/2 lemon
1 tbsp coconut nectar/maple syrup
1 dropper full of marine phytoplankton (optional)
½ tsp turmeric
¼ tsp pink salt
2 drops black pepper essential oil (or a pinch of black pepper)

Procedure:
Place all in a high speed blender and blend on high for a few minutes. Strain out ginger pulp using a nut milk bag and store in the fridge for 4 days – take a swig when you’re needing a boost of warmth and are feeling dehydrated. This is also a great companion on a long hike.
