Day 17

Fats are blamed for obesity and heart disease, but there are heart-healthy monounsaturated fatty acids that reduce bad cholesterol and in turn lower the risk of heart disease and stroke. Avocados contain good fats, plus fiber, vitamins, and minerals, that help in weight management and nutrient absorption, prevent vision and bone problems, and even inhibit cancer. It is also a good source of folate needed for fertility and pregnancy. Dont’ you just love avocados?!

Dr. Ann’s Energy Soup

Ingredients:
5 cups of baby greens (kale, spinach, romaine)
1 cup of green sprouts (broccoli or sunflower)
1 cup of sprouted legumes (lentil, garbanzo)
2 avocados
1 apple – for sweetness
4 tbsp of seaweed – dulse or nori
2 ½ cup water
½ inch of ginger
1 lemon, juiced
sliced lemon for garnish

Procedure:
In a high-speed blender, this soup becomes smooth and creamy. It can be eaten warm (blend for 4 minutes) or room temperature (blend for 1-2 minutes). Garnish with a slice of lemon.

Day 16

Maca is a crop that grows in high altitude areas specifically in the Peruvian Andes. Maca is an adaptogen that supplies energy and balances hormones allowing the body to feel good, adapt to stress and perform better. A good source of carbs, protein, fiber and essential vitamins and minerals, it is also used as an aphrodisiac and provides fertility support.

Maca Carrot Cake with Lemony Vanilla Frosting

Ingredients:
cake
1 ½ cups oats
4 large carrots, peeled and chopped into small chunks
½ cup pecans
½ cup dried coconut
1 tbsp maca powder
1 tbsp maple syrup/coconut nectar
2 tsp cinnamon
½ tsp nutmeg
1 cup soaked raisins (mix in by hand)

frosting
1 ½ cups cashews (soaked)
¼ cup young Thai coconut
2 tbsp coconut oil (warmed to a liquid in dehydrator)
2 tbsp coconut nectar/ raw honey/ maple syrup
2 tbsp lemon juice
1 tsp vanilla powder
2 tsp lemon zest
2 drops lemon essential oil
1 tbsp water (more if needed)

Procedure:
For the cake, process the oats into flour in your food processor then throw in the rest of the ingredients(except raisins) and process until it all begins to stick together. Mix in raisins by hand.
For the frosting, blend all ingredients in your high-speed blender until smooth, aerate when necessary.
Place the cake in a 250 ml mason jar and fill 1/3 of the way. Press the cake down. Then add the frosting and fill 2/3 of the way. Garnish with cinnamon, shredded carrots, and pecan halves.

Day 15

Beetroot’s high iron content helps in developing red blood cells, helps improve circulation, regulates blood pressure and lessens the risk of heart disease and stroke. They’re also known to boost endurance, fight inflammation, improve brain function, aid in liver detox, and fight chronic illnesses including cancer. They are great for athletes! This recipe also rocks!

Red Beet Borscht

Ingredients:
salad
3 large red beets, peeled and shredded
½ head napa cabbage, chiffonade thin (or shredded)
2 fuji/gala apple, shredded
4 carrot, shredded
1 cup sprouted wild rice
1 cup sprouted lentils

broth
4 tbsp miso paste
1 tbsp lemon juice
1 tbsp gluten-free tamari
1 tsp allspice powder
8 cups boiling hot water, divided

garnish
with minced fresh dill
a dollop of cashew sour cream
a spoonful of sauerkraut
green onion
freshly ground pepper

Procedure:
Combine all salad ingredients in a large bowl and mix well with tongs. Mix broth ingredients in 2 cups boiling-hot water until dissolved. Divvy out the salad mixture in individual bowls then pour the miso mixture over top each equally. Fill the bowls with the rest of the hot water and garnish with a dollop of cashew sour cream, a spoonful of kimchi, green onion, and dill. Alternatively, you may blend all ingredients in a high-speed blender for a unique
creamy soup – if this is the case, add 2 cups of room-temperature water before blending then blend for 4 minutes until steamy. Once in individual bowls, add the rest of the hot water and stir by hand.

Day 14

Cayenne is one nutrient-dense spice that may alleviate several health issues, especially on your digestive, circulatory, immune and respiratory systems. It helps relieve seasickness, rheumatism, migraines, psoriasis, and helps with allergies, vision problems, and is beneficial for weight management. PS – this recipe rocks so much!

Sweet and Spicy Coconut Chips

Ingredients:
3 cups coconut flakes
2 tbsp maple syrup
2 tbsp tamari
1 tbsp extra-virgin olive oil
1 tbsp liquid hickory smoke
1 tsp pink salt
pinch of cayenne

Procedure:
Toss together in a large mixing bowl and then dehydrate on teflex sheets at 118 °F for 4 hours. Remove teflex sheets and continue to dehydrate for 4 more hours until crispy. Store extras in a glass jar and add to everything! Both sweet and savoury dishes will sing with flavour! Try this recipe with thinly sliced eggplant or zucchini instead of coconut for another crispy alternative!

Day 13

Moringa grows in tropical regions where it has long been used for cooking & medicinal purposes. Dubbed as the Miracle Tree, Moringa has more iron than spinach, more vitamin C than citrus, and more B vitamins & potassium than bananas.

Basil and Moringa Carrot Soup

Ingredients:
1 cup chopped carrots
5 small tomatoes
160 mls coconut cream
2 tbsp fresh basil
1 tbsp miso paste
1 tbsp dried moringa leaf powder

garnish
fresh basil
cayenne pepper
black pepper

Procedure:
Simply place all in a high-speed blender and blend until smooth and creamy! Serve chilled with fresh basil, cayenne and black pepper dusted on top.

Day 12

Seaweeds are an abundant source of trace minerals such as calcium, zinc, potassium and iron; have anti-inflammatory and anti-bacterial properties; and are a rich source of iodine, a nutrient often missing from our food that regulates the thyroid gland. On top of these, they are of low caloric content, making them great for weight maintenance.

Sushi Salad

Ingredients:
sauce
¼ cup gluten-free tamari
2 tbsp toasted sesame oil
1 tbsp wasabi powder, mixed with ½ tbsp warm water
1 tbsp ginger powder
1 tbsp fresh ginger
1 tbsp olive oil
1 tsp dulse powder

salad
1 avocado
2 cups of shredded carrot
4 sheets of nori, torn up
1 cup sprouted wild rice
1 cucumber, julienne
1 red pepper, julienne
black and white sesame seeds
a handful of mixed baby greens

Procedure:
Mix the sauce ingredients in a mason jar and shake vigorously. In a separate bowl, chop up the salad ingredients, add sauce and mix with tongs. Sprinkle with sesame seeds.

Day 11

Camu camu has up to 60x more vitamin C than oranges, making it potent in boosting the immune system and liver health, enhancing moods, and combating symptoms as macular degeneration, cognitive dysfunction, and arthritis that comes with aging.

Camu Camu Poppy Seed Nice Cream

Ingredients:
1 cup young Thai coconut
½ cup coconut butter
1 cup cashews, soaked and rinsed
½ cup maple syrup
½ cup lemon juice
1 tbsp lemon zest
2 tsp camu camu powder
1 tbsp poppy seeds (mix in by hand)

garnish
½ cup raspberries blended with ½ tbsp of liquid sweetener and 1 tbsp chia seeds
lemon zest

Procedure:
Add ingredients to a high-speed blender (except poppy seeds), aerate as necessary. You’ll want to make sure the mixture is really creamy – use a spatula or Vitamix tamper and put some muscle into it! Transfer into a bowl, stir in poppy seeds by hand and pour into ice cream moulds/ice cube trays. Freeze for 5 hours and enjoy! Try it without the cashews for an even creamier nice cream – this also makes it nut-free.

Day 10

Cruciferous vegetables like broccoli, cauliflower, cabbage, and arugula were scientifically proven to contain compounds that have antibacterial, antiviral and anti-inflammatory effects, protect cells from DNA damage, inhibit tumor growth and deactivate carcinogens. Studies show cruciferous vegetables can reduce risks of prostate, colorectal, lung, and breast cancer.

Cauliflower Mash

Ingredients:
3 head cauliflower, chopped into small pieces
1 cup pine nuts
3 tbsp fresh thyme, stems removed
2 tbsp dried sage
¾ cup fresh lemon juice
6 tbsp miso paste
3 clove of garlic, minced
½ cup olive oil
fresh ground black pepper to taste
Garnish with chopped celery, pea shoots/sprouts, coconut bacon, smoked paprika

Procedure:
Process in a food processor until well mixed and chunky or continue to process until as creamy as you like.

Chocolate Banana Cardamom Smoothie

Ingredients:
2 ripe bananas
1 big handful of spinach
½ cup hemp hearts
1 Medjool date
½ tbsp maca powder
¼ cup raw cacao powder
1 tsp cardamom or 1 drop of cardamom essential oil
4 cups water

Procedure:
Blend in a high-speed blender until well mixed and frothy – garnish with chia seeds and cacao nibs

Day 08

Eating an acidic diet of processed foods, meat, fish, coffee, soda, sweets and dairy causes weak immunity, lethargy, weight gain, and poor nails, hair and skin. To negate its effects, consume more alkaline vegetables as these are basic on the pH scale and can bring you into a better balance. Consuming alkaline food promotes weight loss, increased stamina, and stronger immune system.

Pad Thai Noodle Salad

Ingredients:
sauce
3 tbsp lime juice
3 tbsp water
2 garlic clove
3 tbsp of gluten-free tamari
¾ cup of almond butter
3 tsp coconut nectar/ raw honey/ maple syrup
1 tbsp toasted sesame oil
2 tsp freshly grated ginger

salad
Kelp noodles, rinsed and cut
Kale, chiffonade
¼ red cabbage, chiffonade very thin
Zucchini noodles, spiralized and cut
1 carrot, peeled or julienned
Fresh sprouts/ microgreens
A handful of pumpkin seeds
A few pinches of chopped green onion
Black sesame seeds for garnish

Procedure:
Prepare Salad ingredients by chopping, chiffonading, spiralizing, etc. Place all in a large mixing bowl. Add Sauce ingredients to a High-speed Blender and blend on high until well mixed and creamy, pour over salad and mix well using tongs. Garnish with a sprinkle of black sesame seeds.
